Here's a great salad for a larger crowd.
1 lg head cauliflower, chopped
1 1/2 cups of salted red peanuts
1 pkg (7 oz) dried cranberries
2/3 cup light mayonnaise
1/3 cup of sugar
In a large bowl, add the cauliflower,
peanuts, cranberries, mayonnaise &
sugar. Stir until well combined.
Cover and refrigerate for at least 1 hour.
Makes 10 cups
